Now newly refurbished, The Red Fort is relaunching itself with sparkling, elegant new decor that incorporates the materials used in Delhi's Red Fort, the court and residence of the builder of the Taj Mahal. And if that weren't authentic enough, the chef, Mohammed Rais, is the direct inheritor of 300 years of Mughal court cooking. Expect dishes like dum ka lobster, infused with cumin and cooked in a sealed pot, or delicate avadhi gosht biryani, invented by Rais's family. The wines are chosen with particular care to emphasise the interplay of flavours.
