Okay, we love the address 'Number One The Shore', and that's not all that is loved at Fishers Bistro, a long-time favourite in Leith with views over the water. The place is small, set on a windy corner, with relentlessly nautical decor, sea blue walls, and bare wooden floors. It's smart, like a well-kept boat. Fish is probably what you'll be having here, but the fish will have been fancified, transformed. Yes, there are superb raw Loch Fyne oysters, but there are also dishes like starter of seared tuna steak with chilli and lime couscous salad, main course of roast rainbow trout with artichoke sauce and smoked oysters, and dessert of chocolate cheesecake. The wine list is heavy on good bottles with lightweight price tags, and the staff make you feel as if they care about your happiness and would like to see you again.
